You might be able to get Taylor ham only in New Jersey. But that doesn’t mean the Garden State’s signature breakfast meat doesn’t belong on an international sandwich, does it?
That was Andrew Martino’s logic. The owner of gtk (Go-to Kitchen), a Hudson County restaurant that specializes in takeout and delivery, was crafting a Cuban sandwich to add to his menu. But he didn’t want to simply sell the typical take on the classic sandwich, which consists of ham roasted pork, Swiss cheese, pickles and yellow mustard on Cuban bread. Partially because he doesn’t like Swiss cheese and yellow mustard. And partially because the kitchen already has similar components that could make such a sandwich.
